A simple beef noodle recipe serving 2 people –
2 lbs Lo Mein noodles
1/2 lb beef tenderloin, cut into thin strips
2 cups assorted fresh vegetables
4 teaspoons cornstarch
1 teaspoon sugar
4 teaspoons soy sauce
1 tablespoon canola oil
1/3 cup beef broth
- In a large bowl, combine the cornstarch, sugar, canola oil, and soy sauce. Add beef; toss to coat. In a large skillet or wok, stir-fry beef in oil until no longer pink; remove and keep warm.
- Reduce heat to medium. Add vegetables and broth; stir-fry for 4 minutes. Return beef to the pan; cook and stir for 2 minutes or until heated through. Serve with lo mein noodles or rice. Yield: 2 servings.
